Last weekend I told you all I was attempting ice cream sandwiches... and here they are! I am so proud of the outcome, this is my first time ever making homemade ice cream sandies!! It was a little time consuming just because I didn't want to cut any corners and have them come out anything less than I wanted. I tend to be impatient sometimes, especially when it comes to cooking, so I just put on Friends, was diligent about cooking and freezing time and whazah! Here we are.
I used Pamela's gluten free oatmeal cookie mix, Tollhouse semi-sweet chocolate chips & Trader Joe's coconut oil for the chocolate coating, and (my new favorite) Halo Top Vanilla Bean Ice Cream!
This is the recipe that I followed but adapted to make it my own! I added a tablespoon of Ghirardelli Cocoa Powder and a couple dashes of cinnamon! I think this made all the difference... ;) There was a special hint of two spices you can't go wrong with. I'm already thinking the next time I make these (because there most definitely will be a next time), I want to add coconut flakes or sprinkles over the chocolate coating before I freeze it. There are so many ways to make these delicious!
